Speech: The choice of fish products in food service sector

Ristorazione Ottavian SPA, leader company in the province of Treviso and neighboring, produces about 20,000 meals a day for schools, industries and retirement home.
The choice of products is based on various aspects including quality, supplier’s closeness, customer type and pricing.
The types of fish products used by the company are mainly frozen, canned and fresh, the latter almost in totality from aquaculture.
Fish from aquaculture has become more important with the introduction of Green Tender and the Environmental Minimum Criteria, especially in school and social assistance catering, also valorizing organic production.
